研究成果
检测方法:开发了基于实时定量PCR的新型核酸适配体传感器,实现婴幼儿食品中AFB1的超灵敏检测,检出限可达2.5×10-8mg/kg,是国际上迄今为止检测AFB1最灵敏的方法;系统研究揭示了奶产品中糠氨酸和乳果糖的消长变化规律,构建了评价牛奶品质的特异性模型,研究结果直接用于完成国务院和农业部下达的复原乳鉴定任务,该标准已于2016年4月1日颁布实施。风险评估:以人体"肠屏障"为靶点,发现牛奶中AFM1与OTA、ZEA、α-ZOL等多种霉菌毒素共存时,毒性显著增强,其机理是协同损伤肠细胞间紧密连接蛋白,进而破坏肠道上皮细胞的完整性,揭示了AFM1与其他霉菌毒素共存时,尽管单个都不超标,但是存在健康风险,研究结果为针对霉菌毒素共存这一新的食品安全隐患制定限量标准提供了重要科学依据。
